(can't find my farking camera so there's only a couple plated pix - sorry! :tsk:)

I was at the butcher yesterday (Huntington Meats at the L.A. Farmer's Mkt.) scoring pork belly for maple bacon. I ended up also grabbing a 3.5# Kurobuta center rib roast.

I rubbed that critter down with some garlic paste from an Armenian chicken joint called Zankou Chicken (if you're ever in the L.A. area do yerself a huge favor and go there). I then hit it with some Maldon sea salt, cracked black pepper and sage from the garden.

Cooked it on the drum around 250 with some Kiawe wood - very nice stuff (thanks Moose)! Took it to about 140, let it rest a little, then blasted it quickly over some Real Montana maple lump - amazing stuff. Got a sweet little crust going. I dragged it through some fleur de sel when I was cutting it up.

Here's a couple quick shots from my wife's camera - there's a chop, some polenta with parmesan, heirloom tomatoes & yellow bell pepper. The veggies are from our garden.

This was a fantastic meal. Kurobuta pork is a whole different thing from regular pork - sweet meat, juicy and just farkin' tasty. Can't buy it too often 'cause it's pricey, but once in a while ya gotta live a little, right?

See that fat there on the chop? I ate a bunch of it :shocked: & I don't care who knows it! :boxing: It was farking good! :twisted:

Next week I'll be smoking some bacon and making batches of spicy and non-spicy sausage. Hopefully my camera will turn up before then.

The entire meal looks fantastic. Premium pork is a great treat from the grocery store commodity pork.

It's like it's a different animal. The difference in flavor and texture is amazing. No need to brine this stuff, that's for sure!
