I made a trial run on a new sauce we have for comps with a little more stand out flavor for the judges. We were also looking for a little different texture on the skin and still maintain that bit through skin the judges look for.

These are just trial run thighs not the size I would use in a comp by the way.

Looks great. I'm still trying to figure out how to get bite through skin. I have achieved it once but most often, I don't. Care to share a little about how you do it? For thighs, I usually brush the skin with butter, apply rub, cook at 300 degrees on the smoker for about an hour and 15 to an hour and a half (to 160 degrees), apply sauce lightly and cook for 10-15 minutes more until glazed, and remove to stand for 5 minutes and serve. Any pointers?

Color is great but that does not even look like chicken. Looks more like a meatball

When did chicken become round?

It's a Myron Mixon cupcake chicken thing. It even looks like his sauce. The black pepper stands out in the colorful sauce.

Great color and glaze. Appearance scores will be very good as long as the size, shape and arrangement are as good. How was the taste and tenderness?

I had a seasoned KCBS over for dinner and he gave me some advice.
He said the texture was spot on perfect and the flavor of the meat was also money. He did say I needed to pack a little more flavor in the sauce. He said it was good eating sauce but the judges only take one bit so get all the flavor I can in there. Nothing major just a minor little tweak.
