View Full Version : I want to make beef jerky

I love it, my wife loves it, everyone loves it. So how can I make it? I'd love to use my WSM to make but I don't mind turning to the oven. I don't own a dehydrator or anything similar to one that I know of. Any and all help is always appreciated.

I'd like to make both thick (1/8") and thin jerky (1/32") if possible. Something tells me though that the thin jerky will be hard to do without a dehydrator.

Looking back on my Jerky posts before, they are crap... so maybe not good to relist. I've made great jerky since then, but have not made any posts on those... maybe I should have.

But anyway, you might want to consider making Biltong, which is the South African traditional way of doing it You don't need a dehydrator. Biltong is Air dried, so really after the cure, you just need a big drying box and big ass fan, and time... I sometimes kick off the drying process with 4 hours in a smoker at the lowest temp I can maintain, just to get a smoke flavour into the jerky.

I'm sure lots more brothers will pop up with good advice.
