OK So tonight I am putting my WSM to it's second smoke test of sorts. I put 2 pork ribs on and 6 pork riblets. I planned on doing the ribs about 4.5 hours at 225-250. But the riblets seem to be cooking much quicker and am worried I might over cook them. Any idea on how long I should leave them on? I'll post some photos as soon as I can figure out how. LOL Thanks
