Ok, I went to a new local rib place tonite and tried their ribs. Now I know how we get real picky when it comes to rib joints cuz we comare to our own backyard Q. They were ok, nice n smoky flavored but over sauced and just missin that uumph. So i took a half rack home, wiped off the sauce, rubbed with yardbird and slapped on the smoker.. Man they were a whole lot better.

Nothing wrong with that. It's like putting Tapatío on a burrito. Just finishing where they left off.

It's not wrong... it's just like trying to impress Chef Morimoto with fast food sushi... it ain't gonna happen very often.

Because that's how a huge percentage of the public prefers them.

I had to meet a couple at a place here in North Charleston last night, don't know if I should mention their name (it's a chain), but the St. Louis ribs were just like Jerky. Good flavor...texture was horrible. Won't be going back if I can help it.

Good thing their chix wings were great...

I bet that's the place. Terrible ribs. Always over cooked and taste like they've been sitting around for way too long. Pass.
