I think I read somewhere, most likely here, that white birch is a good smoking wood. I just got a nice branch from a friend. I just chopped it into chunks, but wanted to double check with my brothers before I cooked with it.

When I say white birch, I'm talking about the white trees you see in peoples yards, and the ones that grow in groves in the forest. Not to mention a prime focal point in Bev Doolittle paintings. You know, the trees with the paper thin, white bark.

I've read that it is similar to maple, good for poultry and pork.

It is great on chikin. Birch has a very light mellow sweet smoke.

Just make sure you take the bark off. It can produce a very thick black oily smoke.

Yes, take the bark off first. Birch is not very dense and will be consumed quickly also, so use it for smoke only and not as a fuel source.
