So we (GreenLeafBBQ and I) have been talking about doing this for some time now, yesterday it became reality. I decided to invite a few of the Brethren (who shall remain nameless, unless they care to admit to participating in the debauchery) over for a few cold ones, and perhaps a burger or two.

Burgers are on, just seasoned with Santa Maria so the true flavor (or lack thereof) was not drastically masked.

So I gotta say, these burgers were less than spectacular. But I don't consider it a waste, I wouldn't have smoked the brisket anyway.

Just as an experiment, we decided to grill some asada style. This method produced tough, chewy, non-fantastic little beef strips :tsk:

To sum is all up, it was a great shared with good friends friends...And if it weren't for the Bacon, the meal would have been a complete and utter disappointment :heh:

The meat & flavor definitely sucked, but that bacon was amazing! Next time I'll buy some .99/lb 18% beef and make a burger. The company was great tough...excellent crew for a spontaneous Brethren bash. Thanks G66!

I admit to being present and having a burger. I was expecting it to be over the top great but was sadly disappointed in the result. The meat was just missing flavor....kinda weird since ground chuck makes a great burger but brisket doesn't...??? Go figure.

Some day I will win the LOTTO and grind up some Waygu.
I promise I will.

For now, it is a Comp meat only and scores very well when cooked properly.
Only way I can justify the $$.

Those actually look great to me.
Brisket with that much fat needs a binder to make it hold together.
I even use a binder on basic Select Brisket and Ribeye I grind.

It's all Good Eats. :-D

We'll grind a choice chuckie and a CAB Tri Tip to fully complete the comparison. We'll even use the same CWB for comparison sake.

Exactly what any good Bongo might do!

Funny thing; the burgers weren't dry at all - very moist with all of that fat - just passed through the medium rare stage like a rocket. It really didnt hold together very well even with all of the fat - G66 had no choice but to let them get to this stage in order to get them flipped.

We had a lot of fun and really did think that they would be better than they were.

There's a place in western Idaho called Snake River Farms that sells the Wagyu in burger. Don't think it's from the brisket though. I get mine at the Boise Coop. A little pricey, but much better tasting than regular hamburger. In fact, I am going to have some tonight for dinner. Was supposed to have it while camping this weekend, but spent too much time on the 4 wheeler in the backwoods.

Hey, WTH, I wasn't invited. If I was there, the burgers would have tasted great, I can tell you that right now. I was up in Tahoe with Smokejumpers testing hand loads and paddling on Tahoe (it turns out that is a bad idea with two sprained wrist ligaments in your right hand).

Yes, oddly, despite what most of you think, we are still a part of the USA, thus we still get to play with guns. I had an odd choice this weekend, gun in hand, high power 10mm rounds in gun, two deer down range about 45 yards. Hmmm...no license, no tags, not in season...'honest officer, the deer jumped in front of my bullets...' Nah, let em go, not worth the possible issue.

My ribs came out OK.... I was not happy with the glaze I got from the pig honey. Needs more sugar content.
However, I did make Chile Verde with the rib tips from the pig honey ribs and tips. I added 4T Fish Sauce to the chile verde when cooking and it was the best I have ever made.

I will start another thread to discuss but thanks so much for the push to fish sauce. My bottle is almost gone..... had Caesar salad tonight, yum with fish sauce!

Sorry, I didn't read your post very well. I cooked ribs 2 days ago. Today I cooked about 25 wings with an off the shelf Teryiaki marnade and Pig Honey Mop. They came out great. The whole picky family loved them! I got a good glaze but I did use the Food Saver to vacuum marinate them beforehand. I used the Pig Honey with a load of Sriracha to warm them up a bit. Next time more Sriracha.

BTW, Marty, did you try the Pig Honey? Did your wings end up looking like my ribs?
