I may be in a situation where 100# of butts may have to be started one day, about 6 hours, and finished the next day to serve at 4. Any problems with this?

Biggest issue may be finding a way to rapidly cool down that many pounds of butts overnight.

I would consider doing them hot and fast in one day, if it were me.

Depends on the size of your smoker and the temperature that you plan to cook. My smoker will do roughly 200# of butts in 9.5 hours at 250+-. We foil at the 4.5 hour mark... I'd plan a 1 hour rest after taking them off; it'll allow them to cool ever-so-slightly and will help in returning/keeping them moist.

My smoker will be at the Fair Grounds which is locked up from 8 PM until maybe 8 AM. We must start serving at 4 PM. That's the problem.

I would start them off site on something else and bring them with you in the morning to finish them on your smoker at the fairgrounds.

I would talk to the fair manager and see if they will allow you in early for this special circumstance.
