So....My wife works for the Mayo Clinic, and the 4th was her holiday to work. So dinner was planned for tonight instead of last night. Plus my son turned 17 today, and my bday is tomorrow.

Decided to do some spare ribs, because they were on sale last week and I picked up 4 racks. And the family loves ribs.

I must say, they turned out pretty good. Maybe a little bit to tender, but not too bad. Plus, the family likes it falling off the bone.

Started with a basic rub :

Salt
Pepper
Brown Sugar
Paprika
Cumin
Garlic powder
Onion powder

I let the ribs get room temp and then removed the membrane off the back and trimmed them up a little. Covered them with a little mustard and rubbed them down. Got the CG Smokin Pro up to temp, threw in a few pieces of Apple wood and then threw on the ribs.

I let them go for 4 hours, spraying with apple cider every hour. Foiled them and put them back on for another hour......and then another 1/2 hour on the smoker out of the foil. Kept them dry(no sauce) because that's the way me and the wife like them, but a few of the kids put a little Demon Pig BBQ sauce on their servings.

I think I am getting the temps pretty stable on the CG offset. I can get it to sit right at 235-240 without much effort. Adding the aluminum foil "gasket" around the opening really helped keep temps stable.

As you can see on the middle rack, I was able to pull it apart at the end with very little effort. (Me and my assistant...daughter......had to try it)

I didn't get any pics after they were cut up, as I had 6 kids hoarding around me as I cut them up and they disappeared of the tray quicker than I could get my camera out :)

Sweet lookin' ribs! It's been a while since I did spares. I wish they'd just go on sale already!
