I received a nice surprise the other day from Big Butz BBQ in the form of a sample of Tom's Pig Pollen rub!

I got a chance to try it out on two racks of spares today and decided to try two applications of it, one rack foiled and sauced with Big Butz Cranberry BBQ sauce and the other cooked without foil or sauce but with a periodic spritzing of a mix of mostly apple juice.

I trimmed them to a St. Louis cut, applied the rub (but ran a little short on the unsauced rack), and then cooked them up on my XL Egg. Here they are when one rack had been foiled for 30 minutes and was ready to be unwrapped:

took a minute to text martyleach to come try a sample (for some reason this handle reminds me to do this):

Now when I sent a thanks to Tom for the sample and my intention to try on spares, he sent me a reply that indicated that it was really designed for large cuts of pork like butts.

However, I can say that the rub complemented the rack with the sauce well! The unsauced rack probably could have used a little more rub (Tom - I can retry this test or try it on a butt if you want to send more rub :becky:). I think the rub would do well on a butt but could be fine on ribs as a secondary use!

Your cutting board is so white. Do you bleach it? Mine has a permanent orange-red paprika hue to it.

I had just taken the board out of the dish washer and took it outside where the bright sunlight reflecting off of it made it look ultra white. It really does have a hue similar to what you described (hidden under the ribs :heh:).
