Ist time I've ever done 'q'. Plenty of grilling but this was a first for me.
Built a UDS this week.

Butt about three and half hours in, ribs getting flipped at 1.5.

Butt pulled a 200. Turned out very good.

I think my UDS was too hot. I was going for the 3-2-1 on the ribs, and after the 2 they were barked over and falling apart. Great flavor, but the ends were pork jerky, and I couldn't get a clean cut. Oh well, first time, I'm still learning.

Lessons learned? Boneless country style ribs dry out on the uds, better on the grill. I need to get a better thermometer in the UDS and trust it. I think it was over 300 for alot of the cook.
Hmmmm when's the next cooking holiday? :-D
