I started getting ready yesterday for todays cook. First time with a full packer. Attempted a couple flats before with limited success and never on a WSM. My youngest decided she would like to keep me company when I cooked last night, so she set up her tent and had fun with her cousin (yep, my grandson) while it was light. She went out around 1230am with me and got in the tent but was in the house 1/2 hour later :wink:

Trimmed up the Brisket ahead or time best I could:

I put the Brisket on around midnight and decided to wait for the butts as I thought they would cook faster. Here's the brisket ready to go:

I putt the butts on at 0300. I stayed up thinking I would have to monitor the temperatures, won't do that again, they stayed with 2 to 3 degrees of 240 all night. Next time I'm going to load it up and go to bed.. Anyways after 6 hours for the brisket:

I foiled at 170* and two hours latter it was done. By noon it was off the grill and in the cooler. Moved the butts to the top and waited for them They took until 2:00pm to finsh then into the cooler for 2 hours. Think next time I do something on the bottom rack I will do it dry, think the water kept the temp low. Here are the results:

Overall it was pretty good. I think the brisket was a little over done as it was falling apart, but it did just melt in your mouth. Flavor was nice, I used Big Ron's Hint of Huston on the brisket and his original on the pork. First time trying them, I enjoyed the flavor. I had my brisket on a roll with a little sauce and I had fried peppers and onions with pita rolls if that was your fancy. Over all I'm going to claim a success :-P

Sorry no plated pictures, everything just vanished off of the cutting board to the sammys. My grandson enjoyed the food but had more fun outside.

I'd call it a success, too! Great looking food and kiddos. I love the last picture of your grandson! His smile says it all!

nice job!!!! those both look very good!!:clap2:only in comps is falling apart brisket bad... any other time its right on time:thumb:

Thanks all, best brisket I've done. Had leftovers tonight, am thinking we will have it again tomorrow. Don't mind at all, I can eat Q every day :-D

Are you familiar with the Mint Hill area? My son is a policeman there. Been trying to get him more into BBQ, he's just learning the grilling side. Won't be long :thumb:

I just live across Hwy 74 from Mint Hill, don't know anything about the area but it looks pretty nice there,beats Charlotte in my opinion. Great looking cook
