View Full Version : Smoked TOFU!

07-04-2011, 03:22 PM
As a goof, I've been threatening to do this for a while.
I only eat Tofu in Miso soup, but what the heck, worth a try right?

I grilled some Brats for lunch. Was chilling, and the coals were still warm, so let's see where this leads, because I have no idea!

What style to try? How would I know? Firm like beef I guessed

Some apple wood on top of some warm coals.

On the far side of the kettle

About an hour or so. Running very cool and lot's of smoke. about 190.

More to come. Any serving suggestions?

I am not a tofu expert, but I've seen others on the board post pics of it, so you should have some good suggestions shortly.

Nice color, maybe use it in some japanese receipe which would add a smoke flavor.

Who the heck would smoke tofu?!

Actually, if you smoke it long enough, it gets hollow inside and you can stuff it with seasoned and vinegar-ed rice, makes a nice sushi. I have also sliced it and served it as a part of yakisoba, ramen soup and in a Asian inspired salad. My next plan, is to smoke it, fill small pieces with shrimp dumpling paste and deep frying it.

What's tofu?:heh:

Is that an acronym for something??

Dinner is a London broil and a half bushel of fresh clams.
So I think I'll just slice and my wife will just laugh!

Really just an experiment.

Added some Weber's Steak seasoning

Looks like it is really taking up that seasoning!

I am curious how this works. I don't mean to sound like I'm mocking. I am having fun with the idea, but I'm curious as well.

...and people thought it was weird to smoke SPAM!:loco:

I will tell you this, if you start off with good fresh tofu, which 95% of the country has never had, you can make a really good dish out of the stuff. It can be quite sweet, ranging from beany to nutty in flavor and it accepts flavors very well. There are at least 4 or 5 forms that are normally used in China and Japan that we rarely see or eat over here.

Grilling is actually a valid technique, smoking not as much, the longer time in heat causing the aforementioned hollowing. It is weird to smoke Spam and it is weird to smoke tofu, so what? You aren't gonna start worrying about what society says about you now, are you? :becky: or  as the case may be.

love the stuff. it can be used in a lot of stuff like salads, soups, sides, etc. one i\of my favorites is when my wife fries it. most of asia eats it and they don't seem to have any issues.

No, you need to serve it with falafel and hummus. Wash it down with carrot juice.

Sometimes it takes a complete nutcase to invent something truly astounding...

On the other hand....:becky:

Good luck with it... I'm very interested!

For what it's worth, I voted to let you keep your man card, but, there were questions about my status for some reason :becky:

Yes, "tofu" and "man card" are often in a state of controversy -- as they should be. :heh:

Sorry but I'm not ever going to use the "T" word again. It took me months to get my man card returned.

I think this has potential as something, just not sure what.

The apple wood imparted enough smoke, but the seasoning was a little bitter.

Put a pat of butter on just at the end.

Sliced. Actually did have a bit of a smoke ring

Tried it with a varied array of condiments

Best was a drop of W Sauce and rice wine vinagar topped with an olive slice.

Okay, will I try it again.. Not sure i would bother.
but if I'm ever in a comp and that comes up, I'm ready!

Thanks for looking!
