View Full Version : Goodbye UDS, hello WSM

So...my wife didn't take too well to the UDS idea. Maybe it was the four-foot flames and plumes of toxic smoke as I was burning the liner. Maybe it was the look of a burnt-out barrel sitting near my well-kept gasser. Her solution: buy me a 22.5" WSM for an early birthday present. The only catch is I have to get rid of the barrel...deal! It should arrive Thursday. I will post pics of the virgin cook soon...

My wife loves my UDS'. She also approved the recent purchase of a 22.5 WSM. She doesn't care as long as I'm home, I'm cooking and I'm happy. She's a good woman.

I told her it would look better when it was done but stopped arguing when she brought up a new smoker. My son was disappointed, though. He was looking forward to a project with Dad. He got to watch the fire though.

I wouldn't get totally rid of the UDS. "Loan" it to a friend or something. You are going to eventually need another smoker. :becky:

Yeah, I already "offered" it to my neighbor. Fortunately, it was only $10 at a salvage yard, and they have steady supply. Maybe if it disappears and then miraculously reappears finished and painted she'll be easier to win over.

I would move it to a top secret location and finish it. You will love having a UDS as well. Getting rid of the liner is the worst part of the entire process. If you have that done already I would keep going. If nothing else finish it and sell it or give it to a friend.

sounds like a good woman too me!!!! mine if very tolerant of my cooking obsession... well she does like to eat my cooking!!!! but anyway parlay that into another cooker:thumb:

My wife loves my cooking and is tolerant of my obsession, but she doesn't abide ugly or dangerous things. So she figures a commercially made smoker will look better and be safer. She's probably right. I have a great mechanical mind but little experience building with metal, so there would be a little trial and error.

I definitely plan on posting some pics of my first smoke. I'll add a pic of the drum for comparison.

Started last night with the rub. I had worked 13 hrs, so I didn't feel like taking a lot of pics. Here are ingredients:

Thus morning, I dusted with a bit more rub, and they were ready...

I got the fire going up to temp and got the racks on...

I put the trimmings on the top for an early snack...

Right now I think I got the temp holding steady at 225 at the bottom rack. It took a little tweaking but not much.

Pics as promised:

The tips finished first of course, so I shredded them. My eldest called them "the shreds" (8-years old). I made some slaw a la Patio Daddio and some garlic mashed potatoes. Everything was delicious. Taking photos took a back seat to eating.

I had read about how steady the temp is on the WSM, but I was impressed nonetheless. Once I dialed it in to 225, it was almost difficult to change the temp. Now I've just got to make use of that space...
