Here's what I've got going on the smoker around midnight tonight. 3 butts (one not pictured) and my first brisket a 7 pounder. Nervous about the brisket so I made sure I'll have enough pulled pork. Hopefully the brisket turns out and I have leftover.

Good luck on all that. Just keep a close eye on your pit and meat temps and you'll be just fine.

So here's the finished product. I pulled the butts a little early hoping they'd finish in the cooler. They didn't pull as easy as they should've but was otherwise outstanding. My guests couldn't stop eating/complementing it.:bow: Had a pulled pork omelet for breakfast with some of the leftovers.

My first brisket was good. The point was quite a bit more tender and moist and again everybody liked it so it was a success.

This was also my first use of the reverse flow mod to my CG and it work much better. The heat is more even. The hottest the SFB end got was 250*
