Had a little Jimmy Buffett Buffet this weekend.. Good food and a great time!

We cooked her in a Chinese Roasting Box Called a La Caja China 54# done in about 5 hours.

I smoked everything with Hickory the moink balls and chicken legs were a HIT!!!

That is the best looking "Maxine" I have ever seen.

All the rest looks great also.

Just curious--what is the Marine tie-in on the canopies?

Fantastic spread to say the least. Care to part with that chicken recipe if you do you can p.m. me if not thats understandable too. Anyways nice work

1.) The guy in the Black shirt with Maxine is a recruiter still active for about 2 1/2 years yet then he'll have his 20 in :)

2.) As far as the Chicken Leg Recipe/ Rub I didn't measure but it consisted of the following
1.) Brown Sugar - Probably 3-4 cups
2.) Garlic Powder- a few table spoons
3.) Chili Powder - a few table spoons..

I actually thought I was gonna regret using so much chili powder but they turned out awesome just the right amount of heat at the end of eating each leg.

I smoked the legs below the Moinks with Hickory for probably 3 hours at 250-275 didn't keep a close eye on the WSM I got it started with the Minion method and was way to hot for what i wanted it spiked to 325 and I just shut it down and let them go!

Great spread. How'd did everyone like the pig done on the caja china? I have never had any complaints and people are always amazed how fast it is.
