View Full Version : How Long To Brine Cornish Hens???

Never done it before. They are about a 1.5 lbs each.

I probably coulda found it by googling, but I figure someone here has first hand experience.

I did some large split chicken breasts for about 2 hours. That was plenty of time. Don't forget to rinse them off before applying any rub and cooking.

Thanks. Got the rinse part down. I've bribed plenty of Turkeys, just never anything small like this.

The general rule of thumb is one hour per pound.

Besides rinsing, let them equalize after taking them out of the brine, too. The recommendation is to let them equalize for as long as they were in the brine. This helps the brine circulate, and it will also dry the skin so it isn't as rubbery.
