i know its not a true moink ball if you use uncooked ground beef but i have some left over so i am making moink balls with uncooked ground beef. how much will this affect the cook time and what temperature do i want the center of the balls to be when I pull them off the uds? Also i am planning on cooking at 225. should i up the temp since it is uncooked beef and if so what temp should i cook at? thanks for the help

I don't know that you need to up the temp - my guess is that the meatball will be done about the same time the bacon is. Cook it to the internal temp you would a meatloaf or any other meatball - 165ish sound good to everyone??

I would just make regular meatballs, and then moink them.

I've made them with raw beef. Personally, I think it is much better as the beef doesn't overcook as much while the bacon cooks. If the ground beef is really soft, you might brown them first in a skillet.
