View Full Version : Special occasion Roast Help!!

I'm having a graduation party for my daughters next W/E. I'm expecting about 65 people. One daughter asked me to make a ham so I'm curing a 28 #er . My other daughter requested roast reef. My question is I need an affordable cut of beef to feed the masses. I have experience with Brisket and Prime Rib. I'm looking for something to cook med to med rare. any help would be appreciated.

I would stick to BBQ brisket if you want to hold down the cost.

Cross rib, top sirloin and tip round are all good cuts to roast, the cross rib is often pretty affordable, as it the round, which is lean and can only really be cooked to medium rare and still be really good.

See if the place you buy your meat has chuck roll available. One of my favorite cuts for pulled beef.

You may want to take a look at Italian Beef - you can make it ahead, slice it thin, and then reheat the day of the party. Here's a link with a bunch of recipes...

Thanks everyone I'm pretty sure I'm going to go with the top sirloin my butcher is giving me case price if I buy two or more...I'll post some pics when I do the cook... thanks again
