Haven't smoked for a while, so I decided to take another stab at a brisket. Up early and on the UDS at 6:30am.

1pm- my fatties and ABT's are ready. Brisket temp is 170*. I'm gonna try foiling it with a cup of beef broth this time.

I just realized there was a piece of bacon in your bloody Mary! Nicely done sir! I could go for one of those right about now!

The broth in the foil and taking it up to around 200 has worked really well for me. Bark is a little soft but the briskeys have been awesome. Let us know how it turns out.

Mr. Bo, that gives me hope. I happened to pull mine off when it hit 200* & it felt like buttah. I have a good feeling about this one, but I'm gonna have to wait a couple of hours to find out :sad:

Brisket was great. Definately my best yet. Mr. Bo you were right, not much of a bark, but it was moist & tender.

Also made JMSetzler's smoked mac & cheese, as well as homemade potato salad & coleslaw to have as sides.
