What internal temp do i need for pulled pork

Start checking it between 190 and 195.

IT will pull around 195 I like to go to 205...another good rule of thumb is when it looks like you can pull the bone right out then its ready.

When it feels like you're sticking your thermometer into a hot stick of butter. Anywhere from 190-205 is probably a good guide but remember you're cooking til its tender, not a temperature.

I start probing for that butter like consistency at around 195, sometimes it's done, sometimes it's not done till 205. Once you get the feel for it, pork butt and picnic roast is one of the easiest things to get right every time.

I'm cooking the same thing now. Been cooking since 6:20 A.M and have stalled out at 180 and can't seem to get to the 190 mark.. Getting very Anxious.

Putting 2 shoulders on the smoker at midnight. Will be up till 2am adding hickory. Then ribs at 9am for a meal around 2:30pmmmm!
