The U.S. Department of Agriculture's Food Safety and Inspection Service has lowered (http://www.huffingtonpost.com/2011/05/24/pork-cooking-temperature-usda-145-degrees_n_866066.html) its temperature recommendation for cooking pork to 145 degrees -- down from 160. (This means that pork will be held to the same standard as beef, veal, and lamb.) Moreover, it is recommended to let the pork rest for three minutes after removing it from the grill or oven; the temp will continue to rise slightly while killing any remaining pathogens.

My wife finally believes that I haven't been trying to poison her for all these years with juicy pork chops. Strange she would trust a government agency more than me...

As a farmer who works daily with the USDA I've yet to believe anything they say let alone common sense things like this. Me I've been cooking my porkchops to 140°'s for quite some time.
