Well, I think I finally know what it is to be a SMOKER. A smoker is one who gets up early or stays up all night to spend 12 or more hours making a sandwich :)

Here's my "First Butt pron" for all ye farkers out there...

My butt had a nice crust :)

OK... I put on two 7.8lb butts at 845pm Thursday night. Butt #1 cooked to 193 internal temp in 12 hours flat. Butt #2 was a little more stubborn and took 13:15 to finish up. Anyway... It, in my uneducated opinion, these are some nice butts. They smell and taste fantastic to me, and they melted apart in my hands.

I guess I have a question now...

What are some great uses for pulled pork besides sandwiches and pulled pork tacos? I'm thinking seriously about working up a pulled pork quesadilla of some sort after PatioDaddio's recent post...

Buffalo Pulled Pork Sammich!

YUP, I hit mine with some bullards buffalo sauce and stacked on a portagee sweet bread roll,...wow.

Pulled Pork Nachos!!!! There is a microbrewery in my town and they serve this. It is fantastic. Serve it with BBQ sauce on the side

Honestly I didn't even think about it because I was making video of the DigiQ DX as well... This video shows the butts on the WSM at the beginning and the end of the cook...

JM looks great. I've found that leftover pp really lends itself to anything Mexican or Texmex, I've even gone as far as to make a red sauce out of it for pasta.

No sir. I still have not gotten a response from BBQ Guru Tech Support after 4 days. I have to work all weekend but I'll probably disassemble that on Monday and have a look at it once again.

You are the second suggestion on that and it sounds like a great idea. I might just give that a try next week. I'm gonna get my One-Touch Gold up and running one day next week and I'm planning to grill a pizza in a cast iron pan, so it might as well be a pulled pork pizza :)

For now I'm pretty happy with the 18.5. I can definitely see the advantages of the 22.5 though. I just don't foresee myself cooking that much food at once... yet...

Looks awesome! A few weeks ago, I smoked a 6.8lb butt. After 15 hours, internal temp was 193*. Charcoal ran out, and it was 1:40am. It was very stubborn.

We like to do pulled pork pizza, pulled pork enchiladas and of course, sammies.

I've not tried it yet, but chili is probably good too. Or chop some up and mix with eggs for breakfast?

I take it you used char coal. What kind and how much? I use pecan wood and I don't dare leave mine for a good 8hrs. I have to shovel in coals during the 8hrs I tend to it.

I used the Kingsford in the blue bag. I don't know how much I used for sure. I didn't weigh it. I did fill the ring to the brim with a #10 can in the middle. I filled the #10 can half way with unlit coals and filled it the rest of the way with lit coals...

Next time I do a long cook like this one, I'll figure out how much charcoal I put in by weight...

Looks good. I was looking at doing a couple of butts on my 18.5 for the first time and was wondering whether to put one on each rack or to double them up like you did. I was leaning towards one on each rack so they wouldn't be so crowded and would cook a little faster. Is there a reason you put two on one rack?

One of my favorites for leftover PP is a nice omelette with lots of pepper jack cheese, and chopped peperocinis (Greek style salad peppers). The vinegar in the peppers compliments the PP nicely.

I think you can use left over pulled pork for about anything. I don't have to much experience but anything that has meat you pretty substitute pulled pork and it's delicious.

You've got a wsm, there's no reason to stay up all night. :wink: After a while you'll get a feel for things. I can put my butts on, dial in the temp and get it stable in about an hour, then go to bed. By morning I'm maybe 20-30 degrees off. Give it a kick to shake off the ashes and I'm good til they're done. For my particular 18" wsm I've learned that in the summer, opening the 1 vent away from the wind fully is about my sweet spot.

Looks great! I like my left over pulled pork as tacos on corn tortillas, or pulled pork nachos. Don't forget bbq spaghetti though.

How about a pulled pork smashed potato? Tater, pork, cheese, jalapenos, sour cream, and sauce on the side. People love to delve into this concoction. Men and women both love the richness of this taste. Just a thought in passing.
