Hey Everyone. I am smoking a wild turkey that a buddy got last weekend. I have never done any turkey just chicken and i was wanting to know what IT do I pull them

Well Poultry is usually 180... can be pulled at 175. But being a wild turkey It's probably best to make sure it gets to 180. I've never done wild turkey b4 so I could be wrong... Can see if anyone more experienced with this chimes in.

I would cook them at 325º - 350º until the breast is at 164º and the Legs and Thighs are at 183º. Guessing and hour and a half or so, cut up like that.

Those legs can be tough as leather if you dont watch out. We usually put them in a pan with butter,BEER, and seasoning , cover with foil and cook for several hours. THE LAST HOUR OF COOKING, SET THEM DIRECTLY ON THE GRATE. this is what we usually do

I did one a few month ago for my neighbor a few months ago. I soaked it in ice water for 24 hours and smoked it on the Egg until it reached about 160 and then put it in a pan covered for about 1/2 hour. Funny how much smaller the breast on a wild turkey is compared to farm bred gobbler. However the thighs where huge, probably from all the running!

Put a water pan in the smoker and those drumsticks will be tender.

Okay, So I brined them in salt and apple cider for about two hours. I used less salt in the breasts than in the legs brine. I covered the breasts in Bovine Bold and wrapped with bacon.

The legs got covered in John Henry's sugar maple rub and I had enough bacon left to wrap one of the legs.

I cooked them at 250 give or take with a water pan, for what ended up to be forever (a little over four hours) to an IT of 165. Then I pulled and foiled. I let them rest and then into the refridgerator and I brought them to work this morning.

You cant beat Wild Turkey for breakfast. The breasts were a tad dry for my taste but by no means inedible. I have yet to try the legs. I will post again after I try them.

I just tried the legs and they came out great. Tender and juicy with great flavor. All in all not bad at all for my first shot at turkey on the smoker. I am ready for my buddies to bring me more now.:heh:
