View Full Version : A little dutch oven chicken

A couple of months ago I had the pleasure of tasting some great dutch oven cooking by fellow brethren Chuckwagonbbqco. Inspired by this, I recently purchased a 6 qt (12") Lodge camp dutch oven and had my first cook on it this weekend. I found a baked chicken & rice recipe from a book called American West Dutch Oven Cooking.

The dish consisted of: 4 boneless skinless chicken breasts, 2 cups of long grain rice, 1 sliced onion, 1 sliced bell pepper, a can of chicken broth, packet of dry onion soup, shiitake mushrooms (my substitution), a can of cream of mushroom soup, and 1/2 can water. Everything went into the dutch oven.

I placed 8 lit coals (Stubbs) onto the grate of my 22.5" kettle with the vents wide open, set the dutch oven on top of them and then put 16 coals on top of the lid:


The oven & lid were rotated every 15 minutes in opposite directions. After 1 hour, I removed the lid and set it aside (first use of this lid lifter as well - very easy to use. Thanks for the recommendation on the lifter Leonard):

Nice flavor in the dish but the chicken was a little overcooked & dry. Next time I'll take an IT reading on the chicken around 45 mins.

Looks good man! Shame you didn't take a "before" pic. You could have entered that in the Throwdown!
