Did 2 Pastramis using Thirdeye's metod. Picked up two 3lb corn beefs- biggest the store had. Used thirdeye's rub. Smoked on the egg at 230 with humphries lump and chunks of pecan. Wrapped at 150- put Sam Adams Lager in one and water in the other. Took them off around 180-185. Wrapped again with foil and let them rest on the counter for a little over an hour. Sliced thin with my slicer- they were really good. I think I like the beer a little better. Now I want to get a pressure cooker to try that method. Will definately do this again. Wish I had some Pics. One of these days I weill learn how to do that.
