Look for a local butcher in your area. That'll be your best bet.

Have you tried Critchfield's? That was my go-to meat shop when I lived in Lexington, though that's been 12-15 years ago....

Get yourself a nice prime rib and have the bones cut off so that there is lots of good meat on them. The boneless roast is a bonus.

My Butcher gets them for me, but they come 80# to the case. But there the big upper part of the rib from the back cut about 8 to 10 inces. These come out of Montana fresh frozen on site.

There is a Restaurant Depot in Louisville. Have you tried there? Prolly 3 hour round trip... You will need a business lic or not for profit Tax ID. Might be able to get a Day pass if you have a KCBS membership...

Gordon Food Service.

Have a Marketplace store right in Lexington:

1856 Plaudit Place
Lexington, KY 40509
Phone: 859-543-2237
Fax: 859-543-2501

I beleive you can order just about anything from their Foodservice list, not just whats carried in the store.

You could call, but I'd go in and look around (no membership required) and talk to the manager, Denny Hamilton (great web site BTW at www.gfsmarketplace.com (http://www.gfsmarketplace.com))

It is my favorite store and I get the same case price as the restaurants. No markup for retail customers.

Good luck, and don't spend to much!

You'll definitely need to ask, and I'd make sure to talk to a manager.

No briskets and stuff out in the display cases, as there is not enough retail purchases of those. They either have to get them from the back, or you need to pick them up after you have them sent to that location with their next delivery.

Just thought of this.

Print out the GFS Product Guide : http://www.gfs.com/files/pdf/gms/ProductGuide.pdf

Check out the section starting on page 72 (Meat). Beef Short Ribs are right there on the right, but there is categories of trimmed/untrimmed. There's a stock # right next to each cut. Notice it is all case's though.

The first few pages have the abbreviation definition.

Now you'll have the proper stock # that they can help you obtain.

Good luck!
