Meatloaf Monday

It's been a while since I got to cook on a weeknight - or even a weekend because of an insane work schedule recently.

Started by sauteeing some sliced mushrooms and onions in butter and making a gravy.

With a slotted spoon - I added the mushrooms and onions to the rolled out meatloaf. Then added some shredded swiss cheese and rolled up.

I smoked with some Pee-can at 300* on my WSM. The kids inhaled their servings while I was taking pics of my plate.

Ahhhh - home sweet home.
