View Full Version : Smoking noob learning with WSM

Hello all-

Just picked up a 22.5" WSM a week ago and fired up 2 pork butts and a loin in my first attempt (never tried smoking anything until this attempt). I had it assembled and the fire from the chimney on the WSM in probably 30" to get it going for the first time, using about a 50/50 ratio of hickory and mesquite. I fired up 2 pork butts and a pork loin last week.

The pork loin was outstanding and the butts were great as well, although I learned I didn't leave them on long enough to get the temp high enough to pull it. (My thermometer was giving bad readings and all I had to go on was one of those grill forks that just indicated rare/med rare/med/etc). The smoke/flavor was very good and I ended up just eating it in bites rather the pulled texture.

I already stocked up with 25 bags of Stubbs charcoal and looking forward to firing up my next meal. This time it'll be 2 more butts and a brisket and I can hardly wait. :thumb:

Welcome...good first start... you learned..

Next time, don't get caught up in relying on temperature. Focus on doneness by feel.. Use thermometer as a gauge of doneness when you can push in/pull out with minimal resistance... at that point, you'll have a great finished product as far as tenderness.

This may bey chance to skip the BBQ sauce and go on the Atkins diet for the grilling/smoking season.
