I had a company call me about catering for 130 people. They are wanting pork, beans, potato salad, chocolate chip and oatmeal cookies, buns, and sauce. They don't want any drinks, utensils, plates. They have there own kitchen with a steam table.

It is a drop and go. The business is about 80 miles roundtrip. I am just getting into catering and know some charge per person and some per pound. What $ figure would you charge for this? Would you have them sign a waiver of some sort that states the you explained the proper serve safe temps? They are serving it for their first and second shifts at the plant.

Me, I would charge by the pound, signing a waiver is one thing proving that it wasn't your fault if they get sick is another, when one has no control, after the fact is scary, my .oo2 only but as with weddings I would take a pass on this

$23 a plate that has a pp sandwich on it, that seems a bit steep. I am not saying it wouldn't be nice to make. :becky:

I didn't figure the costs as sandwiches...it just said buns were included. I figured plate prices.

If it's just sandwiches, I'd do it for $2,900.

When posts like this one come up I always try to pretent it were a customer asking and I come up with a price before looking to see what others on here say. I came in at $1550

He asked what "I" would charge, not what I would charge if I were him. For me...that's one hell of a drive/delivery. :becky:

Now, if I were him (and he lived where I do)...I'd probably charge somewhere around $1,100+/-.

There is a meat market here in town that is always cheaper and their stuff always sucks. I hate to say it but I will - all of my ribbons and trophy's cost money because they validate that I can cook. My repeat customers prove it. Don't sell yourself cheap, sell profitable solutions...:wink:
