Brethren... It's been a long minute since it feels I've posted anything. Been dealing with some back pain and a couple other things going on. Took a step back from it all relaxed and did a steak for dinner for a change of pace. I actually found a semi-decent steak the other day, so I took it out and got it ready... It's not a looker but it sure was tasty and tender, and to be honest it probably would have looked a lot better if I wasn't such a lazy ass and trimmed it the damn thing. Such is life... lol  Anyways, grilled up the steak with some asparagus, shrooms with some béarnaise... It kinda went like this: :thumb:

Asparagus seasoned with some EVOO, fresh garlic, salt & chili flakes.

the steak with some of my steak rub.

had some guava smoke going.

then reversed seared

fire roasted the asparagus

and plated

Looks excellent.

I always use granulated garlic when I grill asparagus (my favorite veggie and cooked my favorite way). I don't like the taste of burnt garlic. I even complain when my wife cooks dal & rice...please don't burn the garlic! LOL She usually does it the way I like it...just beyond done, but not as far as she likes it.

What's in the sauce? That dinner looks great!

A béarnaise is a basic sauce made from clarified butter, egg yolk, an herbs. It is one of those basic sauces you mix while whisking in hopes that it won't break on you.

The spices/herbs are generally black pepper, shallot and tarragon.

It is kind of like a Hollandaise sauce.
