OMG I just got wood. Thats exactly what I am hoping for when we finally finish the outdoor kitchen. I was going to get Klose to make me a larger version of the Bandera.

Is custom built by Klose. I worked with Dave. We designed it and speced it out last year using a bandera he has onsite as a model. I got a phone call out of the blue a few weeks ago that it has been built. I just got it and haven't had a chance to go look at it real good but it looks sweet. The original specs were 26x26x52 chamber and 26x20x20 firebox. Dave told me he tweaked the specs a little and at first glance it looks a little bigger than planned. He said he gave me alot of grill room. Looks like he lengthened the firebox a bit. Also it was suppose to be 1/2 steel in the firebox, but i dont see 2 size plates. The shelves all slide out and there is ALOT of room in there. The water pan covers the entire bottom of the chamber and there are 2 seperate firegrates where it can be used as an offset or direct cooker(ala wsm) by closing off the chambers. Also close off the chamber and you can grill on one side while smoking on the other.

Came with some damage in shipping. The handles were bent and the smoke chamber damper was destroyed and bent 90 degrees upwards. i'll take this up with the freight company. The repairs are easy, but it still sucks.

Gonna season it today..ASAP.... hopefully maiden voyage is this weekend.

Bent Handels I can see, scratches well ok don't like it but it was shipped from TX. But how in the F*uck did they bent the MF damper? That was just mean. That was done when it was crossed docked and two asses had time on their hands.

Make the trucking company pay to have Dave fly up to fix it proper should be around $7000 :roll:

not gonna chance bending the chimney. Gonna cut the rod flush and then weld on a new one. Allready called dave and they are sending all the stuff i need. New damper, rods and handles.

Been seasoning it for 4 hours so far. Sprayed it down with canola oil and then fired it up. Had a hell of a time gettin temps over 200.. had a fire big enuf in there to burn a barn. kept struggling to et the fire up.. talked to mr kick and was frustrated and not very happy.. then had this brainstormm.. forgot the one thing I preach tro new owners all the time. Dont go by the door thermometer. Door was reading 300, but to get it that high I had to remove the water tray and move the fire into the cookin chamber. Wehn i touched the steel, it was FARKIN HOT!!! BYC never got that hot.. dropped a probe down the chimney and the temps shot HI> Whick means its above 592 in there. Well.. at least i know im getting a good seasoning. :) Gonna put the water tray back in in a little bit a see where temps go with it installed. I'll be back.. :)

Phil, this bad boy looks GREAT! If I had to make one negative comment about the cooker, which is nit picking at its extreme, is that it appears that the only way to get out the water pan is if you were to take out the bottom most rack in the cooking chamber. Is that right?

I know it was designed to get maximum shelf space but isn't that a pain in the patoot to get out the waterpan, especially once that thing starts getting all greasy and well seasoned after so much use?

I am green with envy. Grats!

Well since i had a 400 degree chamber thats was seasoned for a few hours i thrw in some chicken tenderloins and a few chicken burgers. Cookin 3 feet over direct heat in a 400 degree chamber loaded with mesquite, wow... they were real tasty. Gotta learn this pits characteristics quick if IM gonna start competing with it come March.

There are definately some design issues i have to either change or get used to. Going sunday to the welding shop where my cousin is going to fix the door handles and cut off the bent chimney damper. Klose is sending out replacement parts. I got couple mods im doing now too. May be cutting a door into the back for easier removal of the waterpan. To remove that pan now, it has to exit the pit at a 45 degree angle, or you have to remove the bottom 3 shelves to lift it straight out. Its made of 1/4 inch plate so its gonna be real heavy and cleaning it is going to be a real bitch. Gotta work that issue. What is REALLY cool, is that the firegrate slides the entire length of the chamber. This would be great with briskets and butts. When they are near done, the waterpan can be removed and the grate slid into the cooking chamber. This should help in making bark on briskets or setting glaze on ribs.

Hey, its a prototype, I'll work the kinks out. Fellin better about it now than i was 2 hours aqo. Stay tuned.

BOS is going back to the creator. The damge was prettty nasty. I sent Dave pictures and he called back tellin me if he dont get it fixed, he will be having nightmares about that pit.. Seems you are not aloud to get a damaged pit from Dave Klose. He insisted that if I didnt mind waiting, he will take that pit back do the repairs and and complete the mods that I was going to do myself and then re-ship it back. After discussing some design issues I didnt like, he said he would just rebuild it from scratch with the issues fixed and the mods installed and he'll sell the old pit at the shop. So version II of Bandera On Steroids is in the makings. This will be a true cutom designed pit with all the tweaks that were missing in the first.. I am psyched!!

but its coming bck even better, so i just gotta be patient.

While ocookin on it the first night i seasoned it, i saw great features and potential. Just the waterpan was a real nightmare and the i think it was too wide and cutoff too much of the chamber. I was going to gut and reweld the waterpan. But the biggest problem was the 1/4 inch firebox. That to me was the show stopper. Original design was a 1/2 inch firebox and 5/16 pit so i agreed to ship it back and start over. sucks today, but ultimately a good thing.

The wrapping is shrinkwrap that they do on boats and stuff fro the winter. My neighbor does it for a side job.

I got spoiled with the 1/2 inch firebox on the BYC. Maintains 250 with a matchbook. besides, i paid for 1/2 inch why not get it?

I'll have to avoid the muddy spots.. :) but kiddin aside.. i HAVE to get that slab poured. Aint no way im dealing with rollin this one around on plywood to get inot the pit. Its nearly 7 foot high and 3 foot wide. Makes it top heavy. I have already had one fall over and it aint purdy. Part of the new design will be foldout outriggers to prevent it from tipping over when I move it. Easy to do, just a piece of angle mounted to the the bottom frame that folds against the lower shelf with a piece of 1/2 inch steel welded downward about an inch short of the ground. When your rolling it, move them 90 degrees out. if it starts to tip, the outrigger will stop it.

Wheelie bar mod. :)

The moving co. would agree with its ease of tipping over. :oops: I say build the next one wider. More stable and less tippy. You may also want to bury some threaded rod in the concrete and bolt that farker down. :idea:

That is a good idea. I ran a 2X6 between 2 posts behind my smoker & grill and then bolted them to it with 1/8X1 1/4 steel. No more tipping. The threaded rod sounds like a much nicer method.

in the pit they are up against a fence so cant tip over and at 1000 lbs aint blowing over. So the only time its an isue is when im moving them. The BYC doesnt have locking wheels, so that one is chocked from and back ot he wheels. the new one has locking wheels so it cant roll around.

I thought about a trailer rig. Even emailed that guy witht hte chuckwagon trailer on ebay. Problem there is no place to put all the other **** I bring..... tents, coolers, WSM's etc. Back of the escalade fills up quick and a trailer rig just wont cut it.

yeah yeah, i know im a pack rat when it comes to luggin stuff.. but look how good we ate. :) I'm going to put som ecabinets on the trailer so i dont have to load/unload, and i already hafd 3foot high walls installed. I am considering selling that one and getting a closed trailer so I can store the stuff in it permanetly and only have to load the cooker. I'll get there, it just takes some trial and error.

I havent decided if im only using WSMS for comp yet. If not, i would still roll the bYC or BOS in the trailer and then roll it out on side. Depends on how well the new cooker performs, although, the unattendance of the WSM is looking more and more appealing. what stops me is I like having the cooking platform. It keeps people away from the cooker.

oh wel.. snif snif.....its gone.. snif snif.... Truck came and got it today. Waybill was listed as "salvage". That hurt. Was a fiasco getting it on the truck. The send this truck with a puny little liftgate that was just about big enough to fit the pit. The lift was 2 sections with a 5 inch rise over 3 inchs which is pretty steep to push 900 lbs up onto, especially with snow on the driveway. The gate itself, once the pit was on it had about 3 inchs on the sides and front. the back was right at the edge. Almost toppled it twice when he kept moving it around and one wheel would fall off the gate.. twice the side of the truck stopped it from falling completely over. When he finally got it centered on the gate, he started the lift, it jerked up and the second outside section dropped about 2 inchs launching the pit off the gate and toppling it over, of course right where i was standing. Caught it from falling completely over but that was one heavy farker. The driver kept insisting how easy it was gonna be.. Wouldn't believe me when i said its falls over easy.. Now I know how this thing got damaged.. If all the drivers are like this guy, it fell over a few times. Figured from the beginning that the only way enough force can be generated o bend the stuff the way it was.

What is the clearance/space between the shelves? The 56sq ft of shelf space is very nice.

i didnt measure it, but i made sure a full size rib rack fit. It did with about 3-4 inchs of clearance above it. Thats enuf to stand spares on end. Only think id have to remove shelves for is to do a turkey.

As usual, I'm days late and dollars short. That was an awesome smoker. It's alot like what I'm looking for in my new smoker. I have to say that it's a beauty. Too bad it had to go back. I saw that you said you were going to have to do biscuit testing. How does that work? I haven't heard of it, yet I can see something like that identifying the hotter spots in a smoker. Sorry this is so late after all the messages, but I just sat down to read the WHOLE string.

biscuit test: Get a few packages of pop-n-fresh biscuits. enough to put 6 or 9 per shelf. With the smoker at 250-300, start cookin ght biscuits and keep an eye on how things cook and where. it will map out the characteristics of the chamber. Hot spots cookin faster cold spots cook slow... real hot spots burn the bottoms.

Figure since the thread re-opened, i'd update. Dave called me up the day the pit arrived back at his shop. Seems it arrived with even more damege than when it left here. Steel was gouged out and the back panels were bent. He said it looked like it got hit by a forklift. I will be working with Monty as soon as I get a chance t work onthe redesign of the firebox and waterpan. stay tuned.

It showed up TODAY!

After shipping MOAB back to Klose and it being more destroyed on the return trip, i was hesitant about having another shipped up and was considering alternatives(thanks Tim). I spoke to Monty, Dave Kloses Fabricator and told him some of the stuff i saw wrong with the old design. The plan was to get together and work on Version II. WE never hooked up, so I thought stuff was still on hold. I was seriously considering going with a differnt type cooker this time, but Oh well...guess I'll just have to settle. :mrgreen:

MOAB v2 showed up today. SURPRISE to me. Called Monty and he said it was tested for 3 days and works amazingly well. It seems seasoned allready, opened up and the smell of mesquite hit me right tween the eyes.

Due to the lowered firebox its not top heavy this time.. It shipped with a medical equipment shipping company that ships MRI equipment and such.. Trucker said they specialize in shipping highend or fragile equipment. Behind the smoker on the truck were 2 $60,000 choppers(motorcycles) shipped form southern california. I asked if he'd drop them off instead, but he declined. :) The pit was shrinkwrapped, wrapped in padding and strapped to the wall. Other company had it rolling around the back of the truck and bouncing off walls. Guess Dave switching shipping companies. This puppy arrived in pristine condition. Not a scratch.

Got a little work to do and then gonna find something to cook. :) Rob.. u still comin out tomorrow?

Its both. Under the plate(1/4 inch steel/), is a grate. The plate can be used as a griddle, I am goint to leave it in place all the time just as more insulation. Top of the firebox stays pretty cool with it there. Preheat wood mod may be an issue. :)

I discoved the atkins version of the Biscuit test. !!

The bacon test.

Scatter bacon around the chamber and see how it cooks where. Shows the hot and cold spots.. and IMO.. bacon beats biscuits to eat after you mapped the chamber. :)

Go figure. Even a stupid fark like me knows that you have to tie something like that down or it rattle all around and get busted up. There are sure a lot of losers out there that take no pride in doing a good job. It sounds like that is not the case at the Klose factory. :D

So what was my day like.. you ask?? .. lets just say i didn't get much work done. :)

Day was speant out in the driveway, getting the wood to dry... cooked up 5 lbs of bacon, in 1 lb clips. do u know how fast u can eat bacon one slice at a time when neighbors are coming by cause the whole street smells so good??? .. anyway.. 5 lbs of bacon. 3 fatties, 3 chicken boobs, a small package of wings, 4 vidalia onions and 10 shell steaks.

Tomorrow will be a couple salmon fillets(thanks Tim):) some country ribs and whatever else i head to costco for.

The pit performs great. Very even temps.. hot spot is similar to the vertical in the BYC. Bottom shelf is coolest, hottest is directly below the chimney, one shelf down from top.

It pushed over 450 degrees with a chimney of lump and 2 splits. 1 oak, one hickory. Once the coalbed was there it ran at 250 for nearly 4 hours before needing a reload for a coalbed at 210. Used up a log or 2 of cherry in the meantime. 2 scoops of lump and a log got it back up to 300 and closing the damper halfway brought it to 250 again. it works well enuf to hold 210-250 on a very very small fire....once stuff gets hot.



Pit performs excellent. I ran it the entire day without the waterpan. It seems to big. i think i may modifying it a bit, but will try it with the waterpan tomorrow and see what it does.

One of my neighbors came over while i was sitting in the drivway, enjoyin a sliced shell steak smothered in bacon and onions. Had a beer in my lap, feet up on the shelf to the cooker,, life was good. Its been a long winter, felt good to hang out, catch some sun and tend a fire for a few hours. I forgot how relaxing that is. I really was just kicked back, something i didnt intend on doing today, and havent done in a while. It amazing how the swett blue can mellow ya out. :) Gelnn came over, we shared the steak and onions.. he sampled the fatties.. then was heading home and stopped,,, thought for a minute and said.. ..."after eating THAT.. i have to go home and eat some CRAP my wife is going to make fro dinner.. thats just not right.... ". I suggested a costco run.. :) told him grab a prime rib or some steaks and I'll cookem up.


He was back in 25 minutes with 2 4packs of shell steaks!!!. and i get to cook some more. :) made up 6 more steaks for him in the chamber.. grilled 2 over the coals. All in all. a great day.. instead of working at my desk and delaing with meetings.. sat outside.. just me and the smoke. :) and a bigass new Mother of all Banderas. :)

Shell Steak, NY Strip, KC Strip. All the same. The same cut thats on the big side of a Porterhouse. Thats whats in the above pic.. 6 shell steaks. I dint make no stinkin ribs today.. just bacon, steaks and fatties and a couple boobs.

cooking chamber is 26x26 square 48 inches high. 7 inches clearance between each shelf. 676 sq inch per shelf, 4056 sq inchs total cooking area. Bottom shelf can be interchanged with a water pan, a food grate or a coal grate. Bottom of the cook chamber is 26inch pipe. firebox is 26x26 square 20inchs high, with 3 height adjustments for grilling. .


I smell like smoke. :)
