You should have gotten a professional monger. That's not much yield from that big of a fish. :-D

Very nice yellowfin, dontcha love that sound when super fat fish hit the deck? Nice big ol thump instead of a plain jane smack. The meal looks great too! Try cooking it to a medium rare next time, the taste is different than cooked through. I bet you'll like it even more!

Nice looking fish. I used to go to Venice every year for the 4th of July fishing rodeo till my buddy with the boat got a divorce and had to sell the boat. Great fishing out of Venice :thumb:

I can tell from the pics that the tuna is most likely spoiled and should be disposed of properly..You can drop the rest off to us bretheren here on the MS Gulf Coast and we will be sure to dispose of it properly. A fish like that deserves a proper burial..:thumb:

yes. we'll be glad to take that fish off your hands!!!!

if you can stand your fish a bit on the raw side, hit a filet of that tuna with some sesame seeds and grill it on a super hot grill for 90 seconds on each side and slice it thin and dip it in soy sauce.

that sounds good! I also like to add some garlic and black pepper in with sesame seeds and dip in a light mustard sauce......mmmmmmmm

That is a beautiful fish!

I second that. Alton Brown had a great episode on cooking tuna where he used a chimney starter as the grill for the high heat need for the sear. Cooked in only a few seconds per side, and man did it look good.

Wow, that is a nice little tuna alright, how are your arms? Good job on the cooking. When we get a lot of tuna, my sister cans them up, nothing like jalapeno tuna salad.

I did a lot of offshore fishing out of Port Arthur, but we went for red snapper -- my favorite fish. That was mostly around shallow water oil rigs. Probably too warm for tuna.

Are the tuna in deeper waters?

Yeah, you've got to get to the blue water before you see any tuna. Venice, LA is very close to the edge of the shelf in the gulf. I've been meaning to drive over there and try a trip someday. Everyone I know that's tried it has loved it.

BlueFin are more Cold Water Natured than Yellowfin.

However Yellow and Black fin have been caught a mere 7 miles off the coast. They migrate with the weather like most other species. Now they are in the GULF.

We caught them around 45 miles off the coast. I know some folks who travel up to 150 miles out.

Yeah, from Port Arthur, 150 miles is still shallow water. The shelf drops off closer in Louisiana. That's how you got screwed by the BP blowout.

I just never got into that deep of water. Not that I minded catching red snapper. :wink:

Were planning on a Snapper trip in June for $100 per person.

Might not make that one though. My newest daughter will be nearly 2 months old, and the wife has two photo shoots that month. :redface:

I love snapper. When I was a teenager in Port Arthur, the guy across the street from us had 42-foot fishing boat, and his son was my age. We would go out for weekends on that boat, and catch coolers full of red snapper.

We would go about 100 miles offshore, and fish near the oil rigs. After three days out there, we'd come home pretty crusty, and I had to put my hands on the walls of the shower at home to get the crust off, because my legs were still out on the gulf.

DONT EVEN GET ME STARTED on the regs. in FLA the comm and rec guys are getting pounded by Crabtree and the gulf council. I spearfish and can tell you that the gulf is LOADED with red snapper and come on, its about time we had a season for goliath grouper. those 600lbers follow me around like puppydogs trying to suck the fish off the spear when I shoot. Whoa, rant.

Yea the yellowfin are more deep water, but the blacks can be had just about anywhere up and down the coast of FLA.

Crusting and searing the tuna in sesame seeds with a little pepper and a hair of salt is awesome, I can do raw in the middle.

Try this soy sauce based dipping sauce, it works real good.
Soy sauce, sesame oil, a little ginger and garlic diced REAL FINE, thin sliced green onion, and a couple toasted sesame seeds. the ratio? Well you have to experiment to see what works. The wife never really measures so it is different each time she makes it. The sesame oil can be overpowering if you use too much. You can sweeten it up with a hair of light cane syrup or go spicy and add red pepper flake. That is a dipping sauce we use for yakimandu but it works for a lot of things, including this.
