Wood recommendation for ribs?

Cherry all the way! I have found cherry puts out the best color on ribs. I tend to use about two fist sized chunks. If you want a more pronounced smoke flavor, throw in one chunk of hickory. Cherry alone though is da bomb.

Whatever you use will be great. Just be careful not to over smoke. It's very easy to do and can mess up perfectly cooked food really fast.

I cook mine at 275, I usually go 2 hours in smoke, and 1 hour in foil. I always have cooked to feel and bend, but lately i have been sticking between the ribs with my thermapen and taking them to 204-207. I started doing this after watching one of malcom reeds more recent rib post.
 
275F is about perfect for ribs. Wrap at about 160-170F internal temp, about an hour, or until whenever it is bending nicely. Probe tenderness/check how loose the bones are. Usually 203-206F.
