Taco Bratwurst - Cinco de Mayo - South of the Border (Pron Heavy)

I have a weekend to myself! Butts are on sale 99 cent a pound!
May 5th is coming
Hummm... what to do... what to do...

TACO Brats!

Big Butt - Check
Onions - Check X 2
Taco Seasoning 1pkg per pound - Check X 6
Queso Fresco - Check
Jalapenos - Check X 2

Caramelize Onions

Cube the Butt and freeze for grinding

Combine your taco seasoning if you use HOT and Original like I do

Add Taco Seasoning, diced Jalapenos and Carmelized Onions to ground butt
Mix to your preferred smear

Test Fry

At this point I am amazed and dazed at the flavor! or is the PBR kicken in!:icon_blush:
Put the mix in the fridge over night
Get your casings soaking too

Next Morning

Mix in Queso Fresco

Load the LEM

Grill some for dinner - I will post pics of that later

Does that Kitchen Aid attachment work well for you? I was thinking about getting one for ours. Also I think there is an attachment as well for a Sausage stuffer, thought about giving that a try as well!

The KA grinder works but if meat chunks are too large you will crack the plastic housing.. meat sinu will stop it from grinding so once in a while you have to take the blades out and clean that off...

the KA stuffer is a POS! get a 10lb LEM with metal gears.
