Hello - I decided to join the forum because I received a Masterbuilt digital electric smoker for Christmas (a sneaky way for my wife to get me to do some of the cooking!). Anyway, I LOVE BBQ, so much so we had a pig roast at our wedding reception 10 yrs. ago. You've already figured out that with my smoker I'm not nearly in the same league as most of you, but you have to start somewhere & there seems to be a wealth of knowledge / experience in this group which I sorely need. My only prior experience is with a Little Chief smoker I bought after a buddy & I brought back 80 lbs. of salmon from Alaska & decided to smoke about 25 lbs. of tails. They turned out so good they were gone in a few months! Did some so-so jerky after that & soon realized I could only smoke, not cook, with that thing so there it sat, unused ever again by me (finally gave it to my son - beats storing it here). So far with the MES I've done a "Poor Mans Burnt Ends" recipe using chuck roast, & also a slab of ribs - both turned out so good I'm encouraged & enthused. As I type this I'm smoking An 8 lb. pork butt which I plan to use as "back-up" for a brisket I'm going to smoke for friends for Thurs. night dinner - just in case!! Not that I lack confidence but as I said - I LOVE BBQ! - it won't go to waste, I promise! I also promise to do my research & won't ask any dumb questions, at least not intentionally.

Welcome to the forum Chuck, glad to have you join us and hopefully take part in the other forums. It's not the physical smoker that makes good bbq, it's the cook.

We don't have a lot of rules here other than spam and advertising are not permitted, the rest is just common sense, courtesy, and mutual respect for one another.

You'll find a great group of people here with a willingness to help and guide you, regardless of of how simple or how complicated you think your question may be. You'll also find that there are many ways to achieve great food, there is no single "cookie cutter" method as some have been conditioned to think. You'll just have to try a few different methods and soon you'll master the way that works best for you.

We'll be here to guide you and answer your questions as you begin your journey into smoking and BBQ. Pretty soon you'll go from asking questions to posting pictures of your progress, and we will all share in your experience as true Brethren.

If you can't find the topic you need help with, or have questions about a specific topic, just start a new thread in the related forum.

There are many members with years of experience that are willing to answer your questions and share their knowledge to guide you in the right direction. Collectively there is a wealth of experience and knowledge among the membership, including you. Don't be afraid to jump in there and share your knowledge and your experiences as well.

Chuck, Welcome to the Brethren!! There is a wealth of knowledge and experience amung the members. If you have a BBQ or cooking related obsession or hobby this is the place to be. Sit back, soak up the knowledge and jump in there and be sure to share yours as well. If you can't find or get an answer to the question here then there is probably not an answer available.
