It was a beautiful day today and the wife is going to be out of town next week. I decided to fire up the WSM an cook up some goodies to munch on while she is gone.

First up. some Conecuh sausage and ham hock bits to go into a batch of Anasazi beans. Cooked them on the WSM without the water bowl so the fat could drip onto the coals. Smelled wonderful.

Next up, some wings with a bit of Oakridge HDD. Lowered the temp in the WSM and put them on to smoke a bit.

Then took the lid off and open up the vents to crisp them up.

Nice and crispy with a bit of heat. Wife actually went back for seconds.
 
Nice work there! I've never grilled on a WSM with the lid off! Seems like a good idea!
