I'm just guessing that the Provolone that you buy is a lot better than I can get here in the flatlands of nowhere.

And I love smoking Swiss. Just don't have any at the time.
I think we have the same problem with meat or rubs...
It's hard to find out a well marbled meat here. Not impossible but difficult.

Love me a toasted italian sub...fav at a deli...but never made one at home...yours looks better than one I been gettin.
