Prime Steaks and Slap Yo Mama Shrimp

The wife has been out of town this week visiting our son, and we didn't have time for a nice meal between when she landed and her work Friday night, so I decided to splurge a little for last nights dinner. I was at one of the bigger HEB's and saw these two Prime Ribeyes. Had to get some shrimp to go with it.

We each seasoned our own. The wife went through the cabinet and did her typical steak seasoning mix which is really good (SPOG and some Korean Mystery Spices). I used some samples I had of Oakridge Santa Maria Steak seasoning and some Oakridge Habanero Death Dust. I kinda thought I over seasoned mine, but in the end, it could have used a little more.

Peeled and de-veined the shrimp, sprinkled a little olive oil on them and then doused them with Slap Yo Mama Spicy seasoning.

Put the steaks on for a reverse sear and got the shrimp going. They cooked up a lot faster than I expected. Those GrillGrates I got for the gasser work great. These really had quite a kick to them and were delicious.

After I got the steaks up to about 100* IT, threw them on upside down GrillGrates over direct heat to finish them up. It gave a great sear to the outside.

Cooked perfectly. This was the best steak I can remember ever having. So tender and juicy. Could have used a little more salt, maybe should have tried that Lava Salt some friends brought me from Hawaii. Didn't think of it at the time.

No, I will not be buying Prime steaks from now on. Choice is good enough for most of the time when we decide to have a steak. But maybe once or twice a year for a special occasion.
 
Yeah Shag. I seriously thought about posting the uncooked version as my Vets vs. Noobs entry. :mrgreen:
 
It's Cucumber Kimchi. Use small pickling cukes. Slice into slices. She uses Korean crushed red pepper, but Cayenne can substituted. Crushed garlic, a little Soy Sauce, salt, sugar, sesame seeds (optional). Make it right before you eat. Too early and the spices pull all the liquid out of the cukes.
