Decided on a version of the bone in pork chop sandwich from Jim's Original in Chicago. Open 24hrs. If you stop to get one at 2:30am after drinking all night, just remember it has a bone, you might wind up at the dentist in the morning with a chipped tooth.

Grabbed some chops from The Jewels, bit thinner than Jim's but they worked out well. Brine in Oil, lemon, salt, pepper & a little water.
Yellow mustard on both sides of the bun, add a chop & a bunch of grilled onions. Been quite a while since I was there last, but pretty close to what I remember.
