Gonna experiment today on the BAS or Big ass smoker with some beef short ribs and pork belly burnt ends. Wish me luck. Plow Boys Bovine Bold on the beef and 3 eyes BBQ rub on the pork belly.



Great minds...I've got the same going on the WSM, although beef back ribs that seem a little skimpy on the beef instead of the short ribs.

I couldn't get 3 bone plate ribs here in Ohio without ordering ahead



I'm your neighbor in western PA. These were a restaurant depot special and from the looks the butcher got as much meat out from between the bones as possible. They are each 7 bone racks stood up on the lower level with a rib rack. I'll probably eat a whole rack and still be hungry haha..but that's what the pork belly is for!
