Hey All,

I'm doing a pig cook for charity this upcoming week (June 26/27) and it looks like we're in for a lot of rain and maybe some high winds. I was planning on smoking the pig on my hog cooker, but with this weather I'm thinking about cooking it on my cabinet smoker (Large Spicewine Ironworks). It's supposed to be a 120Lb pig, so I know I won't be able to get the whole pig on a single rack, but if I cut the hams off (and maybe the head) I can get the main body on one rack, and the rest on another.

Anyone ever used this method to cook a pig? If so any tips or things to look out for during the cook? I've done plenty of pigs on my hog cooker, but I've never even really considered doing one on my cabinet smoker.
