Mexican Escabeche - made with pickled chile peppers (usually jalapeños), carrots, red onions, and sometimes cauliflower. I used to see them on tables at Mexican restaurants, but don't anymore. Anyway, here is something you can do with all those peppers you need to get rid of.

I used to love the pickled veg at the Mexican places, but yes you're right, most don't have them anymore. I think there is one maybe two near me that still put them out on the table.
 
It seems alot of that kind of stuff went away during the lock downs and never came back.
 
Looks great!

Covid took all the condiments and salsa bars away and people got used to it. It's been back mostly but there are a quite a few places that did away with them. Homemade FTW!
 
Big fan. I do something similar as a side with a few of the Mexican dishes I sell. I remembered it from some restaurant in the before times as well, and had to find a recipe and replicate it.
