We don't really have an Easter cooking tradition in the family other than a gathering of all with an overload of home made food. In times of lockdown, we wanted to do something different. The weather was great over the weekend so decided to fire up the offset and smoke a turkey breast. I seasoned it on Sat with coarse salt, coarse black pepper and a bit of smoked paprika for color. Let it brine overnight.
We wanted some US sides with this US-style cook, so made coleslaw and cornbread.
The misses said it was the best turkey breast ever and she was right (as always ). It had a huge smoke ring. First time making cornbread but NOT the last for sure.
