So rubbed lightly with Rub Co Competition rub, then a generous coating of Rub Co Santa Maria rub, and in the fridge for a few hours(the longer the better). Sorry for the crappy cell phone pictures.
On the Weber with an indirect fire and a few chunks of Red Oak, to smoke for about 45 minutes.
Smoked until IT is 124.
Then directly over the coals until IT at 140
Next, a 20 minute rest.
Then slice against the grain and serve.
