Good day all! I'm posting to see if there is a good summary of how to use a ceramic cooker. One of my coworkers was just gifted a vintage ceramic cooker by a neighbor (I forgot the brand...but it's not BGE, Akorn, Kamodo). He noted that it did not have a gasket.

When he fired it up yesterday, got it holding temps well at ~ 230. He then fiddled with the upper vent a bit and temps just started climbing!

I don't have any experience with ceramic cookers and was hoping to point him to a good resource (aside from suggesting that he join this site).

Thanks in advance!

First off it needs gaskets so that all point of air entry can be sealed so only air come in the bottom vent and exits the top. Without that temps will always creep up as the fire inside sucks air through any holes.

After that it is really about learning the specific way the smoker likes to run. Once they are up to temp it take very little air to maintain
