Hi all, I'm a new member to the forum. Been lurking around various BBQ sites looking for ideas on my next BBQ "capital investment." I have the typical cheap offset smoker experience with cooking briskets and butts, done some big cooks, a pig roast last summer, but mostly have been using the good old Weber kettle for the last 20 years or so for everything else. With a growing family, I got tired of cramming everything into a 22 inch, so I treated myself to a 26 inch kettle. The thing is sweet. Kettles to me are just something that need to be possessed and cherished. I'd write a poem about them, but I'm still new here and it would probably be embarrassing.
Anyway, the reason I am considering another capital investment is because of my old man. He cooks outside occasionally, but usually has me cook at family get-togethers. The other day, I brought him some brisket I cooked up. I get the usual, "it was great" that all family members are supposed to say:wink:. ) Next thing you know, he comes over and tells me to look up a particular Horizon model on the internet, the 20 incher with the vertical chamber. I tell him there's no way he's going to make use of something like that for his occasional cooking, the amount of charcoal/wood it needs, how much they weigh, etc. Not worth the trouble for his purposes. Then he says he want's to get it for me, no negotiating. Well, knock me over with a feather...was not expecting that.
He gives me the task to start looking around for something that I would use. Options being wide open, I looked around in earnest. A few weeks of research later , that turns into me putting in the order for a Peoria Custom Cooker Backyard model with insulated firebox (non trailered). The cooker is now ready to pick up, but the winter weather decided to arrive here literally on the day I was scheduled to drive down to Peoria to pick it up. So now, I'm just waiting for the weather and the schedules to line up for the full-day roundtrip. However, I'm not complaining, it's a very nice problem to have. I could have never afforded to have this kind of problem on my own.
So now that I'm officially "sponsored" I looking forward to developing some Rib Skillz. That's the one meat I haven't had consistent results with. I've already read plenty of stuff here to get me started on a good path.
