The parsley in our garden was getting obnoxious, so I decided to make a chimichurri. Wasn’t sure what to fix with it, so we finally decided on chicken. Deboned and removed the skin and seasoned with Chupacabra rub. Already had some bacon wrapped jalapeños from the garden cooking at 325. Threw chicken on bottom rack and let the bacon from the top rack “baste” the chicken as it cooked. Sliced the chicken and a little chimichurri on top. Was delicious!
