First Venison sticks

Friends gifted me 3 lbs of ground venison so made up a batch using Waltons' "Uncle Willeys" mix. Thought at the sample patty it was going to be insanely spicey. In the skins, not so much. Looking for dry jalapeño for next batch. This venison was already ground and I did a one pass through the fine plate. Strikes me as being too mushy, didn't really notice the half pound pepper jack cheese.
Next batch I'm looking for just trimmed muscle and push it through the large plate once.
All in all it was pretty good if you don't mind mushy sticks.
