I just bought a used Limo Junior a couple weeks back from a fellow Brethren...thanks Nordy! It came off his comp trailer, so it needed a little mod work/welding before I could get casters mounted on it. That prevented me from cooking on it until this week. You can see my amateur welding skills in the second pic!

So I fired it up and threw on a rack of BBs and a Chuck roast.

Simply Marvelous Spicy Apple Rub on the ribs...and SM Peppered Cow Rub on the Chuckie.

I ran the pit at 260* for the whole cook...no-foil ribs took right at 5 hours. Glazed with my homemade sauce the last hour or so. Foiled the chuckie during the last hour with a splash of Worsty, then pulled it out and rested in the oven for over an hour before going straight into the fridge.

Had the ribs for dinner with some onion roasted potatoes...they were great! And saving the chuckie for another day, foil wrapped and stored in the spare fridge. If it got as tender as I think, it'll be pulled beef sammies in a day or two!

Thanks for looking!

Would love to take a bite out of one of those ribs. It all looks really good. Congrats on a beautiful cooker!

Nice looking food! I really like my Limo!

Thanks Ron. My first impression is all good. Rock steady temps all day using the DigiQ. And very efficient...I ran it at 260* for over 7 hours on about 5 lbs. of coal. I'm very happy with it!
